Waldorf Salad For Diabetics
4 tsp. mayonnaise
3 sm. red apples
1/4 c. chopped walnuts
2 tsp. unsweetened pineapple juice
1/2 c. diced celery
Mix mayonnaise and juice. Dice unpeeled apples. Mix with celery and walnuts. Fold in dressing. One fat exchange.
